How to Cook
Steam in a white wine, garlic and shallot butter broth for four to five minutes until the shells open, then discard any that stay shut. Simmer in coconut milk with curry paste and kaffir lime leaf for a Thai-style bowl, grill shell-side down over high heat for three to four minutes, or bake with tomato, feta and olives at 200C for ten to twelve minutes.
Storage
Refrigerate at 0 to 4C on arrival and enjoy within 48 hours. Store loosely covered under a damp paper towel - never seal live mussels in an airtight container, as they need to breathe. Discard any with broken shells or those that do not close when tapped before cooking.
